Pathfinder Wins :)
Well,
savageplanet, you convinced me. I'm switchin' to Pathfinder! The main thing that made it a go was HeroLabs, combined with the ready access of the Pathfinder SRD including monster blocks. I built myself a little encounter calculator utility for SWSE that was easy to convert to PfRPG, so that's also making the encounter budget process a lot easier. (Unfortunately, I wrote in in ColdFusion, so it's not readily shareable with the world. If my Javascript chops were better, I would have written it in that instead.)
This does mean I'm going to have to do more of my prep "on paper,"[1] particularly when it comes to building critters not in the PfSRD (such as forest giants and ogre adepts), but a lot of that is fairly streamlined in PfRPG compared to 3.x, so hopefully it won't be too bad. I do all of my SWSE prep on paper, after all. Fortunately, most 3.x critters convert easily, and if I want a quick-and-dirty convert I just add CMB/CMD to the beastie and it's ready to go. (Skills can be done on the fly ... "Perception" skill = higher of Spot/Listen, "Acrobatics" skill = highest of Balance/Jump/Tumble, "Stealth" skill = highest of Hide/Move Silently, etc.)
I'm looking forward to seeing how it works out. Since a lot of my house rules were moving in a more-or-less "Pathfindery" direction anyway, I might as well let Paizo do the work, right? ;)

[1] By paper, here, I mean "WordPerfect," which is better than paper. :)
